The Birmingham food truck scene is quickly on the rise. Whoever had the clever idea of putting a restaurant on wheels is a pure genius! Shindigs Catering prides themselves on ‘offering a quality fast food service that fuels people to grow personally, emotionally and spiritually’. The owners, Chad Schofield, a Birmingham culinary superstar, and Mac Russel, an Alabama native who perfected his career as a chef by traveling to Italy, sought to establish a place where people can come grab a quick bite, while thoroughly nourishing their bodies with the freshest ingredients. Shindigs travels around Birmingham daily, in hopes of increasing their convenience. I had the privilege of catching them in Homewood, right in front of Icing on the Cookie! Today’s chalkboard menu featured a variety of choices like burgers with a twist, meatballs and spaghetti squash, brisket with wild mushroom farro and truffle grilled cheese with tomato soup.
I went with the truffle grilled cheese and tomato soup. The chargrilled sandwich was loaded with a melted mild cheese, but the truffle oil claimed the stage. This decadent twist on an American classic was perfectly complemented by a spicy tomato soup. My friend Taylor, who suggested Shindigs, ordered the meatballs with spaghetti squash. It was surprisingly a lot of food! She took her leftovers home with her. Taylor opted for a healthier option, while I stuck the classics!
We thoroughly enjoyed this special lunch break. Being about to sit outside on a 60 degree day in January is rare and so much fun. I will for sure be tracking Shindigs down again. They’re weekly destinations are posted on their website! Be sure to find time for some local food fast!!
